Shar made a suggestion that maybe someone would like to start a thread where we could share our favorite x-mas recipes. So....here's one of ours. It's a lovely, light sweet roll with an icing topping. Some might call it a sticky bun. It's to die for...I promise.
Sweet Roll Dough:
Measure into mixing bowl 1/2 cup warm water. Add, stirring to dissolve 2 pkgs. active dry yeast. Then stir in:
1 1/2 cups lukewarm milk
1/2 cup sugar
2 tsp. salt
2 eggs
1/2 cup soft shortening
and half of 7 to 7 1/2 cups flour.
Mix with spoon until smooth. Add enough of the set-aside flour to handle easily; mix with hand. Turn onto lightly floured board; knead (about 5 minutes - by hand or in your bread maker) until smooth and elastic. Place in greased bowl, greased side up. Cover with a damp cloth. Let rise until it doubles in size (about 1 1/2 - 2 hours). Punch down; let rise again (about 30 minutes).
Roll about 1/3 recipe mixture (of the dough) on lightly floured surface to about 1/4" thick (9" x 15" in a rectangular shape. Brush with butter (about 2 tablespoons). Sprinkle with 1/2 cup brown sugar and 1 teaspoon cinnamon. (Use walnut pieces too, if desired.) Roll as for jelly roll, beginning at the wide side. Once it's in a roll cut it in slices that are 2" - 3" in length. Then repeat with the 2nd third, and then the last third.
Place in greased pan (so the 'swirl' shows to the top and bottom. Spacing them just ever so slightly apart. Let rise until double (1 - 1/2 hours or longer). Bake in 375 degree oven about 25 minutes. Frost with a powdered sugar frosting.
Powdered Sugar Frosting:
One box of powdered sugar
1 teaspoon vanilla
1-2 tablespoons butter
and then enough carnation-brand canned milk to thin it to icing consistancy.
