I have a special request, came through ebay seller question else I would just handle it outside. I have seen seller put up an auction with the buyers name in it, is there any other/better way to make sure they are the only ones who get it?

Start by going to the following page:
http://pages.ebay.com/help/sell/manage_bidders_ov.html#preapprove

And, just pre-approve only that one bidder and then send them the link to the auction.

Yes. Deal with them directly through e-mail. Putting it back on Ebay will be a huge waste of money and if this guy changes his/her mind in the mean time, you lose even more.
